Adobo, which Europeans often call simply "stew", has Filipino roots and a ton of options. One of the classic ones is chicken adobo.
chicken weighing about 1kg or a little more
100 ml of soy sauce
0.5 l chicken stock
3 tbsp. tablespoons of grape white vinegar
2 tbsp. tablespoons of brown sugar
4-6 chopped garlic cloves
3 bay leaves
freshly ground black pepper
After examining the chicken and making sure that there is no lint and feather residue left on its carcass (otherwise it will have to be scorched), we rinse it and dry it a little. Cut into standard pieces: legs, hips, wings. Separate the halves of the breast from the bones.
We mix the components of the marinade, put the chicken in it, mix, cover, leave to marinate for at least an hour, or better - for 3 hours, so that the marinade is absorbed, giving the meat tenderness and taste.
We shift the chicken with the marinade into the pan, put on a strong fire, add the chicken stock. As soon as it boils, we reduce the heat to small, on which the chicken is stewed under the lid for 30 minutes.
Next, remove the lid, salt the adobo and set a fire on which the chicken will boil slightly for another 15 minutes until the sauce is reduced in volume and the pieces of the chicken become brownish.
During cooking, white rice will have time to cook, which in the Philippines is traditionally served with chicken adobo. It remains to put rice on the dish, on top - chicken, pour sauce from the pan.
- Finely chop the onion and ginger, chop the green onion, chop the garlic and hot pepper.
- Heat a frying pan with oil, fry onions, garlic, ginger and chicken for about 10 minutes.
- Add black and red pepper, bay leaf and fry for another 2 minutes.
- Pour in vinegar, water, soy sauce and bring to a boil.
- Simmer over low heat, without covering, for about 5 minutes, salt to taste.
How and with what to serve:
Sprinkle with chopped chives before serving.
