Vegetarian Chickpea Sausage

Recently, vegetarianism has become very common. More and more people refuse to eat animal meat. The food industry provides a huge range of products for such consumers. Today we learn about what ready-made vegetarian sausage is on sale, as well as how to cook this dish at home.

These products can be used as a standalone dish or included in salads, sandwiches, pizza or canapes. For the recipe you will need:

  • chickpeas - 1 cup
  • vegetable oil - 50 ml
  • beets (small) - 1 pc.
  • garlic - 2 cloves
  • salt - 1 tsp
  • soy sauce - 1 tsp
  • nutmeg - 1 pinch
  • cardamom (large) - 1 pinch
  • black pepper (ground) - 1 pinch
  • coriander (ground) - 1 tsp

Vegetarian sausage consists mainly of naturally freshly washed wheat protein. It is nutritious and versatile. Such a product can be consumed by all groups of the population, from babies to diabetics. In the manufacture of different varieties of sausages, only the composition of aromatic spices changes. The use of animal supplements is completely ruled out. Vegetarian sausage (the recipe for this dish will be given below) is ideal for people who control their weight. Its calorie content on average is 207 kcal. As for the composition, for example, the cooked sausage "Boiled Milk" includes wheat protein, edible salt, refined coconut oil, corn starch, a mixture of spices, Adyghe cheese, pea protein and natural dyes of plant origin. The main advantage of such a product is the absence of preservatives and other harmful additives, including synthetic dyes.

Homemade Vegetarian Sausage: Recipe

In foreign countries, products for vegas can be purchased at any supermarket. In our country, this is still a bit problematic, since far from every store has departments with products of this kind. Home-made vegetarian sausage is not much different from factory sausage, it is also tasty and healthy.

To prepare it, the following ingredients will be required:

  • wheat - 2 cups
  • boiled beets - 1 pc.,
  • onion - 1 head,
  • olive or peanut butter - 65 ml,
  • salt - 1 incomplete Art. l.,
  • coriander - 1 tsp.,
  • garlic - 3 cloves.

Cooking

The wheat is washed several times, poured with boiling water, wrapped and left for 8-10 hours to steam. The remaining water is drained in the morning. The steamed wheat is twisted in a meat grinder twice, using the smallest nozzle. Boiled beets are also ground. It is used to make vegetarian sausage color reminiscent of the more familiar meat. Onions and garlic are also minced. Then add the remaining listed components. The number of spices may vary depending on taste preferences. The finished mixture is rolled into a sausage and wrapped in 2-3 layers of foil. Stack in a double boiler and cook about 40-50 minutes. Then the sausage is transferred to the oven and baked for about half an hour at a temperature of 180 degrees. The finished product is very tasty both in hot and in cold form.

  • 1/2 cup white beans (without liquid and washed)
  • 1 cup soy milk
  • 1/4 cup shiitake mushrooms
  • 1 1/2 tsp salt
  • 1 tsp white pepper
  • 1 tbsp. l Sahara
  • 1/4 tsp allspice
  • 1 tsp paprika
  • 1 tsp marjoram
  • 1 tsp sage
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 1/4 cup wheat gluten
  • 3/4 cup water
  • Flour for kneading

Homemade veg sausage with peas

For a variety of lean days, you can cook a vegetarian sausage, the main ingredient of which will be peas.

The following foods will be required for this dish:

  • peas - 200 g
  • garlic or garlic powder - to taste,
  • beets - 1 pc.,
  • salt,
  • nutmeg,
  • cardamom,
  • ground black pepper,
  • marjoram,
  • mustard seeds.

How to cook

The amount of spices for 200 g of chopped peas is approximately 0.5 tsp. each kind. However, this is not fundamental. The ratio can well be changed depending on taste preferences. So, chopped peas are crushed into flour. The resulting mass is steamed with hot water and insisted for a couple of hours. Next, the swollen mass is cooked over low heat until cooked (cooking time depends on the variety of peas). Beets are rubbed on a fine grater and squeezed juice. For such a quantity of peas, approximately 10-15 ml of juice is needed. The pulp itself is not needed, it can be used to prepare any other dishes. Beetroot juice, all of the above spices and vegetable oil are added to the cooled pea mass. The mixture is laid out in a blender and whisked at low speeds. The result is a gentle mashed pink. Then the resulting mass is laid out on a plastic wrap and rolled into a sausage. Its diameter can be any. After that, almost ready-made vegetarian sausage is transferred to the cold and kept for about a day. When the homemade sausage hardens well, it is used for sandwiches, in salads or spread on a piece of bread as a paste. Bon Appetit!

To cook a vegetarian pea sausage is necessary.

Prepare beet juice in advance.

Pour peas in 500 ml of boiling water, add bay leaf, allspice and a little salt. Cook over medium heat, stirring occasionally to make the peas boil and not sink to the bottom, and add a little boiling water if necessary.

Puree the boiled peas until smooth with a hand blender, add ground coriander, ground black pepper and vegetable oil.

Add approximately 1 tablespoon. beetroot juice and minced garlic. Continuing to beat, add beetroot juice until the desired shade is obtained.

Transfer the still hot pea puree into a clean plastic bottle and leave it in the refrigerator for the night.
